How to set up the Page structure?

I'm trying to figure out how the page structure was set up on here but I can't seem to replicate it.

I want a series of pages (About Us, Staff, Contact Us, etc) as children of a main mysite.com page just like it's set up on here.

I want the menu down the left hand side but I don't want the pages to show up in my forum. If I untick "display in node list", the side-menu also disappears.

I'm sure it's a simple option I'm missing can't figure it out.

Ah is it a case of just hiding the parent node and the children disappear from the forum list but keep the menu?

You can make a category, not display that, and then a second parent under it, which you display. And the childs below it. That way it wont show on the frontpage, but the rest is visible when you go to it - and has a side menu?

I don't think I even need the category, a hidden parent page works fine.
