I feel like I'm eating too much processed vegan foods, so need to start eating healthier
It is good to realise that.
I've been eating surely unhealthy enough, and not checked my portions. November is changing this. I've switched back to mashed potatoes, carrots, white beans, and applesauce, sometimes with a bit of chicken, sometimes without any meat. It's fine. I know it's not 'vegan' a lot of the times, but it's the baby steps to get to a point where I am comfortable with switching up what I eat, trying new things, and adjusting portions, and realising i can eat things without the traditional 'it must have meatballs with it..'. It allows me to pick certain burger paddies in the shop for a vegan style burger, or have a nice sauce with some vegan chicken bits. Because together with some rice or a salad, it's perfectly fine.
It just sucks that a lot of the vegan/vegetarian foods are still a lot more expensive and then disappoint so greatly.
November is about emptying my pantry while stocking up fresh stuff that will have a long shelf life, and checking my portions, and more food-prep for the week. I hope during black friday I can find glass containers for food prepping to keep dishes fresh in the fridge for 3 to 5 days, but that i can use it in the oven, airfryer, and microwave.
